Looks fabulous Russ! Forgive me for asking, did you use the mint? I appreciate there is not much mint in the recipe but none of the pics in this topic look as though the mint was added especially Mike's original pics.

I really must get round to trying this recipe, it's just a daunting thought of having a huge pot of kebab paste sitting  around.

Hi Malc

Yes, I did use the mint sauce as per the recipe, however it just absorbed and vanished into the marinade mix - you would never visually know it was there! actually I not sure given the relatively small proportion of it, that I would actually notice if it was omitted altogether  :-\

I make this tikka recipe as standard now. It really is delicious  :P

Also don't panic about such a large pot of Madras paste either - it keeps for 6 months in a cool dark place such as the under stairs cupboard according to the instructions, storing in the fridge is not necessary.

Worked out nice for me last weekend this recipe, thanks Chewy.

I didn't use Ghee for the constant coating that you do, but it was still really nice.

Ghee isn't to everybodies taste but normal butter is just as good and used in some BIR restaurants.

WOW!!! Just made this and it is now my fave! Was worried about the pungency of the mustard but once marinated it blended it really well and gave great flavour with a nice amount of heat! Also did the chaat masala on about half of it and it gave it a great zing!

Hi Chewy, couple of Qs if you don't mind?

Are the marinade 2 ingredients added to the same bag which contains Marinade 1 (plus chicken), or is the half marinaded chicken pulled out of the marinade 1 bag and added to a new bag with marinade 2 ingredients?

Is the mustard oil the KTC edible blended stuff which is a mix of rapeseed oil and mustard oil, or the small bottle of pure mustard oil which KTC sell? Is it to be preheated to smoking point and cooled before use?

When I do this all is in the same bag at the stage 2 point. I also use neat mustard oil straight out of the bottle, think its KTC, quite a small bottle.
