Researching this, I have come across many references to a popular traditional Punjabi dish known as Paneer Butter Masala or otherwise known as Paneer Makhani. Many of the Punjabi recipes i've looked at are quite red in colour and some even contain tomato ketchup! But what does seem to populate most of the recipes is the use of Kashmiri Chilli which will give you that vivid red colour for sure.
I would suggest you start with a Makhani recipe using kashmiri and up the spicing to your requirement with green finger chilli.

Just reaffirms my belief that (finding) this forum is worth it weight in gold.
Thanks again Stephen, I will certainly give those two recipes of yours a good testing and thank you as well Axe.
I've never tried a Makhani, so hopefully the making of it it will turn out to be another significant part of the puzzle.

Inspired by your post I am going to continue my quest for the Punjabi Masala this afternoon. I found myself out on the town in Dundee last night and as we wandered up the Perth Road we decided to visit the Balaka which has been open since the 1970s and some of the staff are still there from that time.
Anyway my mate and I ordered and Madras and Punjabi Masala respectively. The Madras was much spicier than the PM so I think you have to tone down the chilli somewhat. I am thinking it is Bhuna strength.
So to cut a long story short I will add to my notes and report back with my efforts.

I don't know id this will be of any help but I asked Ali in the Shanaz tonight how he would prepare such a dish if I asked for it, this was his response, "I would make a tikka masala without the coconut and load it up with lots of green chilli, punjabi's love the heat". I asked about the Kashmiri as regard the colour, he replied "no, it would be chilli powder".
Hope this helps in some small way.
Edit: to change reference to from Az to Ali, I must have had a funny 5 minutes!
