Samosa filling

Hi all,
Does anyone have a tried and tested samosa filling recipe.
I am going to make some this weekend, so some
pointers would be great.

Samosa are great fun as you can really play around with the fillings and flavours. For a simple meat samosa I add garlic and ginger paste to a pan, with chopped onion and soften, stir in black cumin and spice mix, then add lamb and chopped fresh chilli, when the lamb is cooked stir through some peas and allow to cool.
If you want veg samosa, replace the lamb with potato and cauliflower cut into small chunks and replace the black cumin garam masala.
