Is deep frying the paneer the way the curry houses do it?

have a look at KD's recipe for sag paneer from the curry secret. i would not have thought that they would deep fry this or the paneer would be very crispy the heat from the final dish should be enough to melt the cheese i'm sure :-\

regards gary

What would i ask for in the material department to get the muslin?

The stuff used for making cheese and the like is called butter muslin. You have to be careful because you obviously don't want it dyed a particular colour. You need the bleached variety.

I just bought the muslim today from Dunhelm Mills fabric department and it is called "white muslin" and sells for 3 pounds a meter.  the smallest amount I could get was half a meter.  so only 1.50!  Not bad and a massive piece too!!
