Chicken Tikka masala and Madras
« on: June 01, 2011, 03:52 PM »
Hi
Got someone in the family who likes hot curries and another who likes a Masala type.
Can a base sauce be made for both . Also i like to cook the Tikka on skewers and then add beside the rice and add sauce as required. Any suggestions would be great thanks.
Also whats the best base to make for most curries

A lot of questions here chelters1.

Yes you can us the same base to make a masala and a madras. The difference is in the level of spicing and addition of other ingredients or not. There is no "best" base to make curries but you'll find on here that they come in waves depending on the enthusiasm of members posting recipes. The Taz and KD bases were both getting a bit of airplay recently. Your idea of cooking tikka and then adding the base later sounds perfectly feasible and I like to cook that way sometimes.

Welcome to a great site,

If you want a base sauce recipe that's ideal for a madras or masala you should try mine that I have just posted in the curry base section. Its nice and easy and works all the time.
