Hi Chewy,

Loving your work my friend, and as Jal Frezi is my favourite, this is certainly going to get a go.

Very interested in the chilli/coriander paste.  What kind of quantities would you suggest and how long would the paste keep, in the fridge?

I've never really measured it, just a handful of green chillies and probably 3 inch of stalks
off the bottom of a bunch or a good handful of chopped coriander, 2 or 3 tbs of veg oil and a pinch of salt,
blitz to form a paste, put in a airtight container it will last at least a week in the fridge.

This is great stuff.  I froze mine in ice cube trays and like to add it to many of the dishes i personally like.  Tastes good on a poppadum too :P :P

Yes, this one is well worth a punt! and another favourite of mine.

Cooking Tip
Jhal Frezi is basically a fry up! If you look at the video again the first 4 minutes are all about combining the ingredients in succession, stir frying and working the mass in the oil.

Because its a old 'sticky' Ali pan, everything is sticking, singeing and caramelising, plus creating and building up flavour.
Then I add the gravy, which is thin and watery and has the effect of deglazing and washing the pan clean again, infusing all that burnt goodness into the sauce.
Further cooking just ensures the meat is heated through and gravy is reduced and thickened.

Red Masala Mix in the vid :-
4 tbsp Yoghurt
1 tsp three Pataks Pastes
Tandoori, Tikka and Kashmiri
1 tsp Mixed Powder
1 tsp G&G paste
1 tbsp Mustard Oil
1 tbsp Vegetable Oil
1 tsp Red food colour (Natural Cochineal)

Cheers for this Chewy.  First time i've made this.  Added a heaped dessert spoon to my revised NIS tonight and it now tastes like the NIS i get from another regualr TA I use.  That'll save some more money ;D ;)
