Hello All,
My name is Nick, and have been a curry fan for many years.
Couple of years back I bought myself a'curry secret' book that gave me the idea of making a base sauce. Over the years I now do this fresh when cooking a curry.
There is a wealth of info. on this site so I guess its all about experimenting with all the base sauces and finding which I like the best.
Being married with 3 children, I am the only one that likes my curry hot so this normally means I tone it down otherwise they will not eat it.
I must admit although my efforts taste nice I have never managed to replicate what I buy at the take-away, wether this is just because I have cooked it myself or maybe its just the heat that they cook their curries at I do not know.
I do have my own tandoori oven in the garden which makes great tasting chicken - have not tried naans in it yet but will do it some day.
Think my favourite part of a curry is the Keema Naan - I just love those - If I could make those I would be a very happie chappie.
