Happy New Year folks.  I made Steven Heap’s base, pre-cooked chicken, tomato paste and onions and knocked out a few curries in recent weeks. Very nice dishes but still not quite the real BIR thing I remember from my UK days.
Going to be 0 degrees this weekend.  And that’s Fahrenheit not Celsius. Look it up. 😂

On a business trip last weekend, found myself in St.Louis Missouri and on my own one night so found a local Indian place and for once decided NOT to have vindaloo.
Found this place a short drive from the hotel and ordered takeout.

I found a Karaikudi Curry on the menu, had never heard of it so in for a penny (or $16.99)
I ordered it ‘spicy’ as here in the US it seems hot curries are milder than I’m used to.

Absolutely fantastic dish, great heat level and full of flavor. A definite repeat to order when on the road again and also to try making it at home. Seriously good curry.
A bit like a Chettinad, fiery and right up my alley.

If you like heat, seek it out.  Not often I’m blown away by traditional Indian food in the US but this was outstanding.
