This video is good - well at least the food at the end of it looks fantastic.

I went on an asian cookery course and the instructor used a pressure cooker for nearly everything in the main dish department. Still haven't bought one, perhaps I should.

Did he give his opinion on how useful or essential the pressure cooker is for the dishes he cooked.? For example, he may have said it's the best way to extract maximum flavour, or simply that he used the pressure cooker to speed up the cooking course but it's far from essential.

Pressure cookers are used a lot in trad Indian coking, for one thing they save on fuel. Recipes are usually timed by whistles (15 mins).

Yes my Indian work buddies swear by the pressure cooker especially for cooking lentils.

Somebody posted a while back using a pressure cooker to cook a base sauce in much less time than normal.

I have one, great for lamb and other meats that have longer cooking time. Not used it for chicken yet but will soon.

Chewy has a video for cooking base in a PC which is the method I use now and produces very good results.

I've got a jiggle-type pressure cooker, and it works great!  I've used it to quickly cook beans and lentils, make stew in a fraction of the time, quick cook stock (which retains more flavor).  Looking to explore with it more, have not tried it for base yet.
