The people?s curry
« on: June 02, 2009, 06:57 PM »
Hello everyone!

Where i live, curry is a very popular dish.
However, what general people see as curry, is very different from what you, informed people see.

In my country "curry" is the name of a very particular dish which comprises the following ingredients:

- onion/garlic
- Any kind of meat, shrimp or whatever
- coconut milk
- Curry powder

And nothing more. This is what "general people" see as the curry recipe.
I?d like to know what you guys think of this simple way of doing "curry". I also would like to know if in your country this is what general people see as "curry".

Sorry for my english.
Thank you!

Ryu,

very big welcome. your english is well good.

i'm in the UK and your list is almost what i would say people see as curry here. i'd take out coconut milk and add tomato.

i very much love the taste coconut brings.

i make thai green curry from scratch a lot and is along the lines of your curry except individual spice is used instead of curry powder.

i also add coconut block to curry base/gravy so that there is a slight hint in the finished dish.

of interest to me is how you cook with the coconut milk. in the thai green curry i boil the cream until it separates (releases the oil). this has always seemed a bit too much effort but i don't know why it's done. any thoughts appreciated.

Welcome to the site! You forgot to say what country you're from! At a guess, Malaysia?
By the sound of it your curries are probably thinner and fresher tasting. Ours are fairly thick with a strong savoury (and a little sweet) flavour. We use a spiced boiled onion puree for the base of the sauce.
