or

do please let us know how it turns out. i keep getting family requests for onion bhajee - which in itself is not a problem.
the trouble is you've got to have the little green stuff for it all to work.
i've never been able to get it right (i've never tried the CRO recipe though - hence the request).

I actually went on a 1 day Indian Cooking Course last week, and they told me how they make the mint sauce and it's so simple.
Grab some yoghurt
Stir in a little sugar to the sweetness you desire, but let the sugar disolve properly in the yoghurt so that you don't get the crunch of the sugar
Add water to the yoghurt mixture to make it runny
then add a little mint sauce out of a jar
Finally and optional either add a small drop of green or yellow food colouring
It's done!! enjoy
I tried this at home after and it works well

presume your going to add a new post on the cooking course - sounds interesting.
will try the mint sauce. i've just been amazed how good CK's madras is so given this is on the same lines of simplicity i expect it will do the same. just on the ingredient listing it's sounds as if it will work real good.

i tried the mint sauce at the weekend and it hit the spot for me. my wife and i finished off a 500g tub of yogurt (for the 1st time) having to repeatedly make more on the spot.

In my opinion the best mint sauce is made using mint jelly rather than mint sauce using exactly the above technique and using castor sugar rather than granulated. You can also add a pinch of salt to further enhance the flavour.

Try this
Spadges mint sauce.........
3 tbsp plain yogurt
3/4 tsp of mint sauce (from a jar)
1/2 tsp sugar
tiny pinch of salt
3/4 tsp paprika
1/3 tsp lemon juice
3 tbsp of water or enough to really thin it down (too thick will be too yogurty)
Mix all the above and leave a little while to allow it to all dissolve 5-10 Min's
let me know if you like it or otherwise ;D
