Last Curries of 2018
« on: January 06, 2019, 10:29 PM »
Happy new year everyone! A bit of a late upload but here are the last curries I made in 2018. I had to cook some food for vegetarians who wanted to try a curry with meat substitutes so I made 2 curries using Quorn pieces. Top left going clockwise; Quorn Curry, Chicken Pathia, Quorn Pathia, Mushroom Bhaji, Bombay Aloo, Chicken Passanda and Mixed Vegetable Curry, served with Pillau Rice. There was very little leftover for breakfast sadly.

All the best

That looks fantastic and sounds like it was very much enjoyed!

As I was reading the list, I was wondering if there would be a Paneer dish (I have used it once or twice), have you tried it and what did you think if you have?

I am now going through a mental list of what I have in the house to cook with.

Thanks BAJ! I have never used paneer but it is something I must try. I haven't even eaten a paneer dish in a restaurant. Yes they all seemed to enjoy it and I am happy to say there was a little chicken Pathia left for me the next day.

All the best

That looks a fantastic spread SR and a nice variety of dishes.

I always include fried Paneer in my Navratan.  Lately I've been making my own and it freezes quite well. I fashioned a very simple cheese press and the process is easy.

Thanks Livo, I like the sound of fried paneer, will have to look into that for a dish.

Looks like a good spread SR

Vegetarians are easy to cater for, its the cranky vegans
that are usually a  pain.

I do a Jal Fry or a Jalfrezi or even a Manchurian, all good with hard Paneer
but if I can get Manchego cheap, all the better for flavour.

cheers Chewy

I've been making Navratan for many years as the "go-to" vegetable / paneer curry whenever I do a banquet of different dishes.  Sometimes I omit the cream and milk at my wife's request and I must say it is good either way (I prefer the creamy Korma version). Any combination of vegetables can be used so whatever is on hand makes this a very versatile dish to prepare.  There are many variations of different levels of complexity and including different ingredients like Saffron etc but I usually just stick to the basics. I will sometimes add Safflower (poor man's Saffron) but not always.  Google it up to find different versions but here is one that is pretty much exactly what I usually cook as a starting point.  (Note: this is a traditional recipes and I have never bothered to adapt to BIR method)

Also check this one out and there are a few other Paneer recipes linked from this page.

If you like Spinach try Palak Paneer.
