Got my base on the boil... What next?
« on: July 24, 2015, 03:04 PM »
So I've spent all morning looking at different base recipes, I've gone for a relatively simple one based on a few that I've seen. So once I have my base, how do I turn it into an actual curry? There seems to be lots of curry recipes and lots of base recipes, but I'm finding it a little unclear as to how the two come together.

Probably should have done this before I made my base haha. Oh well I guess I'm too impatient.

Any help would be much appreciated, including any nice tips and recipes!

Cheers!!!!

Hi. What you need to do now is look up a recipe in the main dishes category, and make sure you have all the ingredients required. One of the ingredients will be the base that you have made. You may also want to get together a mix powder, which is a combination of ground spices which varies from person to person and recipe to recipe sometimes hehehehe. My advice would be start with a fairly simple recipe with fewer ingredients for early attempts but it does depend what you want to make. Hope this helps and the best of luck.

Thanks a lot! It went great, just a simple curry with some onion, pepper, chillies, sweet potato and chicken (and lots and lots of coriander!)

Using the base definitely added something to my curry I haven't achieved before. When making one from scratch, I find you get a lot of the dark flavours from the spices and then the really bright flavour from the salt, chilli and tanginess off the tomatoes, but there's no middle ground if that makes sense? This wasn't amazing and was just a first attempt to see how it's done, but it definitely had a much more rounded and full flavour.

Thanks again!
