Well afater seeing the pakora's I thought I'd have a go at some veg pakora and as the fryer was out do a few onion bahjis as well. Both turned out nice and looked a better colour than the pictures. My new phones camera seems to wash out the colours under light. I think I need to get the book out. Anyway veg pakora and onion bhajis with a tamarind dipping sauce and some youghurt sauce.

Now they look like normal and edible Onion Bhajis. Nice One. ;)
Also look close to BIR Bhajis.

(Your Pic) Just go into your phone settings and up your exposure a little, or it
might have HDR - High Dynamic Range feature, if so, switch it on, should make a difference.

Here's your same Pic with only the exposure tweaked 5%
