At last, I got my act together and acquired the necessary pastes to revisit Curryhell's delicious Elaichi North Indian Special.

I still couldn't get my hands on Patak's Kashmiri Paste, but as I make my own, it wasn't too much of an issue - and I had to scale back on the chilli content out of respect of my good lady wife's delicate palate.

For a variety of reasons, it's been a while since I've made Curryhell's dish, but the flavours brought cherished memories flooding back. The North Indian Special has got to rate as one of my top 3 curries, and the diminished heat in last night's offering did not detract from it's excellent flavour and consistency.







If you haven't yet tried the NIS, then take my advice and make it your next curry. Highly recommended! :)

Never made this one, always thought about it but never have the pastes

Looks great Naga  :P - You certainly know & love your onions  :)

I also make my own paste / masala from dried kashmiri chillies (re-hydrate them first). I love the flavour and colour from kashmiri chillies - sweet, aromatic but not too hot.

It's one I've been meaning to make for ages, and it's always been getting hold of the kashmiri paste that's held me back.

Any chance of your recipe Naga?

Hi fried. It's not my recipe, but one which I found on the internet and tried out.

I had published the original link on the forum some time ago, but it now forwards you onto another website. The good news is that the recipe is still available together with a load of other stuff.

Just don't stand over the pot while your reducing the mixture to a paste - it fair clears the lungs! :)

Sex on a plate  ;D  Nice work Keith.  I'd struggle to beat that little beauty ;)
Some great full on porn being posted by some members just lately.
Alas, the original on which my attempt was based is but a memory, after one more change of management that has proved to be one too many  :'( . The onion and pepper chunks replaced by a couple of chillis, in a thin insipid orange liquid with undercooked garlic slices, and totally lacking that rich tandoori background flavour and colour.
@ fried.  I believe it was h4ppychris that put up a video of kashmiri masala.
I really must make this dish again soon  ::)  Looks like i have some serious competition though  :o

Sad news indeed, Dave. I remember you mentioned this very fact a while ago, but I, for one, am really glad you managed to replicate the real McCoy while it was still on the go. Your recipe is a topper! :)

I like the " put in on a plate and eat " presentation rather than the" Arty "exhibit stuff
