Sounds like your enjoying the fruits of your breadmaking labour! I bought a "sourdough" loaf from Sainsburys the other day and it was so far removed from the real thing I couldn't believe it! It was badly baked and I thing it was made from commercial yeast?!? Nothing like the real thing.(IMO)

Whichever bread I now bake is done in the Dutch oven (cast iron casserole pot) and produces consistent results. My sourdough is the dan lepard method cooked ken forkish style! (Excellent book).

Simply delicious.

I wish I had seen it before!

Since I have moved to the land where criminals were once deported too, one thing I have missed is the bread from the UK.  I don't know why but it is different, some good but a lot is not so good.

I will have to have a go at this soon

Worth getting into, very therapeutic making a loaf from just flour, water, salt and yeast. Especially when it's your own yeast cultivation.
