What size is a ladle?

Pete said in one of his reports/recipes: ?1.5 ladles of ghee (call it four dessert spoons - 4DSP)?
Now, 4 dsp = 40 ml
So 1.5 ladles = 40 ml
1 ladle = 27ml or thereabouts, according to Pete

Kushi Balti Book says: ?Some of the recipes call for a ladle to be used. In the restaurant, we use a 125ml ladle which is probably slightly larger than many domestic ones. The amount you need depends really on individual taste, but use 125ml as a guideline.?

I?m totally confused! Is the typical ladle size anywhere near 27ml, 45ml or (as seems more likely) 125ml. This is a HUGE range of different sizes. If you use the wrong ladle size it could completely throw out a recipe attempt, just like using the wrong size of onions where onions weight is not given.

It's a toughie that one George. I think the real answer is that the ladle size is whatever gives the right flavour and consistency to the dish for your taste. After all, if you make a base sauce recipe, it's unlikely to have exactly the same water content as the author's attempt.

But I sympathise with your comments, lack of quantities and other vagueness doesn't help to recreate a dish as the author would probably wish.

Hi,

I have just measured mine and its
142 ml or 5 fl.oz

I normally use two ladles of base sauce for
one person.

just had a google and found they come in
1, 2, 4, 6, 8, 12 oz capacity the 5 fl.oz one i have
is listed on a site to.

The ones i have seen in bir kitchens look 5fl.oz or more.

;D you go to say it, we have our ups & downs here at cr0 but our ups... are really up  there!! :)
Ive yet to find a more forgiving place, 3 cheers for us, were else will you get someone counting each spec of ground spice in each teaspoon in a vain attempt at attaining the all allusive secret taste to a stupid Country bumpkin (me) trying make a even more poor attempt at making DARTH VADER & Curry relative to each other, why here of course.
Does Curry make you mad ? i don't know but whats this fish doing in my bedroom smoking my cigars ? :P

Hi George,

My ladle is also 5 fluid ounces (i.e. a quarter of a UK pint, or 142 ml). 

I agree Graeme, it also seems to me that one or two of these ladles (i.e. appoximately 140 to 280 ml) is about the right amount of curry base per person (depending on the type of curry being made).

It is clearly ambiguous ( ;) haha) to talk in terms of a number of cups or number of ladles (unless their volume is stated of course).  It is much clearer to quote the actual volume used 8)
