Thanks for the replies helping explain that missing 5 percent problem. That was exactly my question. And those that gave their opinion on the sweeter curries - thanks but that wasn't my question to be honest, it's all a subjective matter of taste, after all!
I'll continue my quest in search of a restaurant-level CTM and Korma and if I nail it, I'll post the recipe here!
