For me, the handle length doesn't matter so much because all my hobs are flat, but I was glad to see that it has an insulated handle, and (for me) the most important aspect was that the sides and base curved into each other : there was not that horrible 75^o angle between sides and base that some pans have, and which makes any sort of stir-frying in them virtually impossible.

It's not a pan problem HC, it's a hob problem. As you pointed out yourself, the pan is perfectly stable when fully supported, but your hob has no support bars at the bottom left. It's the poor hob design you should have highlighted.

I get what your saying SS. I have just used the new pan to make 2 S.I.G's, Really good. A pan that stays put  ;D it al do for me.

Great tip. I just moved home, first time cooking on the new cooker (which happens to be a fairly old cooker) and I just experienced that with my sonnex pans! the trick I used is to put the chef spoon in a way that will counter balance it.

I agree with SS as I used to have a gas hob and it was dire when it came to pan support. But as you pointed out Chris, if you have a dire gas hob support matrix, the right pan is essential. Heavy handles is one to avoid.
