Is it ok to cook a base to the stage before adding the spices and toms then cooling before carrying on with it again later? Got one on now have to go out unexpectedly.

Yes, if your cooking in an Ali pot, it will continue to cook and still probably be warm when you get back.

Sorry Chewey. I didn't make that clear perhaps. What I meant was, can I cook up until the bit before I ad spices etc but then stop, let it cool completely then start over again and carry on again later having started from a cold mixture?
