Chicken pakora

Hi there. I just love chicken pakora from a takeaway or resturaunt. I've tried making it myself using spices nd red foo colouring.just always something missing and it always ends up dark brown.Im goin to make some tonight so if anyone could help that would be great! I use gramm flour
