Another dish I made yesterday and was so busy forgot to take pics. But here's the recipe they're great

Sauce:
0.5 (120ml) cup smooth peanut butter
0.5 (120ml) cup soy sauce
0.25 (60ml) cup rice vinegar (I didn't have any so used cider vinegar)
0.3 (40ml) cup sugar
0.25 teaspoon red pepper sauce
Kebabs
boneless skinless chicken breasts (2 lb), each cut lengthwise into 4 strips
large red bell pepper, cut into 24 pieces
Cooking spray (oil for spraying)
Method:
Heat gas or charcoal grill. In a large saucepan, mix peanut butter, soy sauce and vinegar until smooth. Stir in sugar and pepper sauce. Cook over medium-high heat for about 2 minutes, stirring constantly, until thickened. Place 3/4 cup sauce in small serving bowl to use as dipping sauce.
On each skewer, thread 4 chicken strips and 4 bell pepper pieces alternately, leaving about 1/4-inch space between each piece. Brush chicken and bell pepper with some of the remaining sauce.
Spray kebabs with cooking spray to prevent sticking. Place kebabs on BBQ over medium heat. Cover BBQ. Cook for 7-8 minutes turning kebabs constantly, and brush with sauce. Cook until the chicken is done and not pink in the middle. Discard any remaining sauce used for brushing kebabs during grilling.
Serve kebabs with reserved sauce for dipping.
