Many years ago whilst working as a dishwasher in a North Scottish BIR, i wish i had got the whole recipe, they made a sauce which i assume is similar to what you are all after, this sauce was served with all starters and is quite common up here.

One of the main ingredients was tamarind water, other ingredients ranged from tomato sauce/chopped tomatoes with some tomato puree, mint sauce, onions, coriander, sometimes they would throw in bell peppers too and blend the lot.

Hi all,

I have been looking for recipes for restaurant style cooking for ages this site is a god send!!

I worked in my local curry house when i was a youngster ... started washing dishes and progressed to cooking all the starters.  Thing is i did little prep and even when i did i paid little attention!  How much i could have learned if i wanted too but most of my knowledge has gone.

This site is the beggining of my redemption!  So much is coming flooding back can't wait to get tore in to some of the recipes.
