Hi onion.
I'm looking to make smaller batches because I don't want to freeze in bags and have the spices taint other foods in freezer. Yours seems a smaller size and could be kept in the fridge in a couple of Kilner jars for 10 days or so.
Can I ask you how many meals it makes and how big are the onions exactly in diameter?

Hi, this is near identical to the one delivered from my local in a small plastic bag
, only they include fresh lemon slices.
Ingredients (serves 2)
1 medium red onion
1/5th iceberg lettuce
1 medium salad tomato
1 small carrot
2" inch cut of cucumber
1.5 tablespoons Maggi brand sweet chili sauce
1/2 teaspoon mint sauce from jar
1.5 teaspoon lemon juice from bottle
Pinch of dried coriander
Method
Peel and dice the onion to very fine sized cubes.
Halve and de-seed tomato & chop up very fine.
Dice cucumber very fine.
Peel and crate carrot with cheese grater.
Shred lettuce with cheese grater.
Mix chili sauce, mint sauce and lemon juice in a large bowl.
Toss in all the salad and mix thoroughly, sprinkle coriander and serve.
