hello guys.

just joined this forum, i have been looking for a forum like this all my life...lol. i love indian food and for quite a few years [ off and on ] i have been cooking it at home trying to get that "just right flavour" like you get in the takeaways and the like but it never happened, there were always something missing from them, i think most of you went through the same turmoil...lol.. before you heard about how to cook the bases..!! but anyway i made a base last night, i did not follow to the exact recipe because i did not have all the seperate spices, i just had a basic curry powder and a bit of paprika, so in the pot went 4 large onions,1 red pepper, 2 tomatos,5 or 6 garlic cloves, a carrot, some oil.. [ olive oil ??] and water. i boiled it for about 1 hour then put the curry powder in then boiled for another 30 minutes, when done i blended it then let it cool, i tasted it and were quite shocked how good it was.. :P..lol.. so then went on to make a chicken curry, fried some onions and a bit of garlic, then about a tsp of curry powder [ in a water paste] then 3 minutes later added the chicken, cooked it for 5 or 6 minutes then put some base in spoon by spoon, when it was cooked through i served it out for me and my girl friend, you should of seen her face when she tasted it and mine..lol.. the taste of it really shocked me!! spot on..!!  ;D looking forward to making another with all the seperate herbs and spices and going exactly the way the recipe states, i think there will be more shocks to come..lol.. BIG thanks to this forum and all you curry heads for the imformation i have seen... ;D

hope my story is in the right section... :o
