The chemical responsible for the yellow colour in turmeric is called curcumin and it is highly pH sensitive.

If you add bicarbonate of soda (sodium bicarbonate) or washing soda (sodium carbonate) to the stain, it will turn a pinky brown colour which may be less vivid than the yellow you have now. If this doesn't work, add vinegar to turn it back to yellow!

Cooking Equipment / Spice Grinder

You can get small coffee grinders such as the Braun KSM2 from almost anywhere, but what about something bigger?

If I make curry powder or garam masala, I like to make a larger quantity and this takes a long time to grind in such a small grinder.

Is there something a bit bigger? Possibly something designed for spices and not for coffee?

When you add the spices to your base gravy, do you allow them to fry in the oil at all before adding the initial half litre of water?
