I'll certainly try some of my usual recipes now using Sunflower Oil instead of Ghee. ;D

Madras / Chicken Curry

Hi
Yesterday I decided to have a clearout of the freezer and found a Chicken leg portion. Next step was to find the recipes for Base Sauce, Pre-cooking meat and a Chicken Curry recipe from this site.
I used the "New Base Sauce" recipe posted 25.6.07, "How to Precook Meat" posted 16.1.05 and forget which Chicken Curry recipe but here it is:
Chicken Curry

    1 large onion finely chopped.
     2 cloves of garlic crushed.
     small piece of ginger chopped (about 15mm cube).
     1 tsp red/green chopped chili peppers.
     Half tsp coriander.
     Half tsp turmeric.
     Half tsp paprika.
     Half tsp cumin.
     1 tsp garam masala.
     2 chicken breasts cubed.
     1 tsp tomato puree.
     Half tomato thinly sliced.
     1 batch of Stews base sauce. (here: http://www.curry-recipes.co.uk/curry/index.php?topic=1894.0)
     salt to taste.

     I cooked the chicken in boiling water until cooked (about 5-10Min's) and kept the water as a stock to add to sauce.

  Stir fry onions in veg oil until brown (about 20-25Min's).
  Add ginger/garlic and chilies and fry for another 2Min's. Turn down heat.
  Add coriander and cook for another minute.
  Add rest of spices and cook for another minute.
  Add base sauce/chicken/tomato puree/salt and sliced tomato.
  Add stock water as required to achieve consistency.
  Let simmer for a few Min's then serve.

It tasted very similar to Darth`s Madras curry. I didn't add any chili powder because of the red/green chilies in it but I might add half tsp next time. Also I forgot to put in a pinch of fenugreek powder which I think is an important addition.

I really enjoyed it and look forward to trying loads more recipes! ;D

Although I've been cooking curries for about 20 years (at home!!), I've always used KTC Pure Butter Ghee rather than oil. I assumed that this gives a more authentic taste. However loads of the recipes on here seem to use oil. Is there a definite difference or is it just personal choice? Also, can I assume 1 measure of oil equals 1 of ghee?

Thanks for the welcomes I've had :) I knew I shouldn't have gone on about the footie, I put the mockers on the result. >:( Still, it's only a game, not as important as a good curry. ;D
I normally get a quick bite before the game at a place called Big John's near St Andrews. I think it's a franchise thing and they do relatively cheap stuff from Fish & Chips to Sheesh Kebabs, Curry, KFC type things etc., etc. I wouldn't recommend it as a top eaterie but I've had the meat and chicken curries (yesterday tried 2 sheesh kebabs in a nan bread with salad) and I've always enjoyed it. The kebabs were a little on the dry side but the only sauces they had were better suited to the donnas.
Anyway, a reasonably-priced pre-match snack place. Just don't expect the Maharaja or the Rajdoot (where if I'm feeling flushed will always treat myself)
I look forward to learning some great recipes and tips as well as some names of places I've not yet tried.

Just found the site and it looks great. I'd be on it all day except I'm off to St A's to witness the Love In between the Mighty Blues and that little team from Lozells way.
