Lets Talk Curry / Tofu prep

Have tried marinating then coating it in c/flour and frying it as well as just putting it straight in the curry after the last ladle of c/base for a few mins with a top up of water, both with decent results. I've no idea how a BIR chef might go about it however, although I'm not sure I've ever seen tofu on a BIR menu.

Anyone else tried it or got any suggestions of how to prep it? (apart from giving it a good press)

Supplementary Recipes Chat / Frozen garlic/ginger cubes

So for my first time making BIR style curry I made a nice fresh ginger and garlic paste but once that ran out I couldn't be bothered to make another one, so used defrosted Cofresh cubes instead and didn't notice a drop in quality.

Has anyone else tried these? I'm not particularly discerning but even so they're a lot cheaper and more convenient.

When you first started cooking using curry base what mistakes did you make that are easily avoidable?

I've done a sort of madras and a bhuna using base so far and the bhuna was so so great but I've invested so much energy in it all I'm kinda scared to make any big mistakes that might waste a lot of time.

Also, I got carried away and picked up a few spices I'd never used before and so far haven't found too many recipes that actually use them. Any ideas of curries that really make the most of mustard seeds, fresh curry leaves and black cardamon?

Only found out about curry base last week and have just made my best ever curry as a result (thank you Glebe's and Latif's Inspired's youtube channels), but have got loads of Qs so figured I'd join up and get asking. From reading the forum a bit everyone seems chill
