Trainee Chefs / Beginners Questions / Oxtail Vindaloo

Last night I tried to make oxtail vindaloo without much success. I browned the onions, made sure the spices were cooked, added vinegar, but it didn't taste all that good. Does anyone have a good recipe and some advice on what I need to do to ensure a good curry.
