i used more dhall when i made it again the other day did seem to help,
also i have been reading elsewhere on here about the (southern version) omitting the pineapple, which seems good to me as i have never seen a chunk in any takeaway down south with it in.
as recipes go, this is a good one so i suppose if your a southerner like me just leave them out

i think your onto something,
i live in the south east, ive eaten dhansak from alot of takeaways locally Eastbourne, Hastings and around the south, like Clacton in Essex to London, Bournmouth and Brighton as iv'e worked away.
Dhansak is my favourite, dish it always will be.
 i have never found a single piece of pineapple in any of them, although some of the menus mention it, some have had a slight flavour of it, maybe they just use pineapple juice.
the taste of the lentils coming through i think is quite important as well as a sourness, many takeaways make the dish too mild, personally i think it should be below madras in terms of hotness. after all they are described on the menu most of the time as a hot sweet and sour dish
but this variation is definitely worth ago as i love my dhansak,
i will let you know.

i made this curry last week to the letter ( it was the first curry i made using the recipes from this site)
i have always wanted to make this curry like a BIR as it has always been my favourite.
after getting all the ingredients, i spent all afternoon making CA's base, the Tarka dhall, mix powder ready for the Dhansak, the tarka dhall smelt amazing.
i made the curry and was impressed how well it turned out, i would say it was almost like a BIR.
the basis of a good Dhansak is definitely there, the tarka dhall just didn't seem to come through enough maybe my measuring was slightly off with the other ingredients at the end. a few more attempts me thinks and it will be there.
being my first i cant really give much judgement, i will let you know how my next one goes though
 
either way not bad for my first BIR curry

yep had these quite a few times now as i love onion bhajis, i even have them as a snack with a salad.
they come out of the deep fryer perfect every time,
didn't ever have to add extra water though as the yoghurt and lemon juice seems to be enough.
thanks again cory every recipe i've made from you seems to be (almost) spot on so far.
and i say almost only because i had to make a few adjustments, probably down to quantities, my own taste and a bit of common sense i guess.

Hi all,
stumbled across this site last week after trying to find out how to make that take away tasting curry, just when i thought i wasn't having much luck on youtube, google etc i found this site.

went out and got all the essentials and made my first dhansak last week it was pretty close to a BIR i then realized i had stumbled upon something special.
been beavering away all week, got a freezer full of base, tarka dhall.
made some bhajis, and then tried a korma last night all have turned out well.
oh except my nan breads they still need a bit of work.

so yer thank you all and thank you CA (been using CA recipes mainly)

made this Korma last night for my girlfriend as it's her favourite, she was amazed. it was a real winner.
I'm not really into kormas that much but i was impressed at how good it tasted although a bit sweet.
might cut down on the sugar next time.
copied the recipe to the letter only addition was methi leaves.
great curry, cant wait to try another.

have to admit most of the recipes (base, tahka dal, bhajis, dhansak) that i have made to date have been taken from CA recipes or a slight variation of them.

hi all,
stumbled upon this site last week after trying online and on youtube to find out how to make a curry like the take aways, with out any real convincing vids etc, i eventually found this site,
i cant believe how long its been going, i wish i had found it sooner.
 now i can fulfil my never ending quest to make a BIR at home.

went out and got all the essentials, had my first curry at the week end (dhansak) with home made bhajis amazing just short of a BIR but good enough, still got a load of base curry in freezer,
doing chicken korma for my girlfriend tonight with nan bread.
lets see if i get the missuses taste approval..
I'm sure i will.
