Talk About Anything Other Than Curry / Anyone interested in SUSHI

Hi everyone,

just a bit curious as to whether anyone on the website was into Sushi and might want some recipes.

Sushi is seeming to be growing in popularity at the moment and is especially popular with those on a diet as its real low calorie food.

If their is a demand for it we can post some recipes or info on how to make it.

In the mean time we have had some late drop outs resulting in a free SUSHI Masterclass being available on Thursday 29th April at The Cooking Academy.

Basically the main subject of our focus was the importance of breakfast and learning to cook. There was some obvious trends as you can see above relating to those that dont have breakfast food habits and those that dont. We were not able to view exam results for these children, but we were curious as to whether performance of those that do not eat breakfast was lower than those that did.

Those that do have an active involvement in cooking at home seemed to have an all round good knowledge of the health implications and benefits of certain ingredients and food groups. We were quite worried that some of those that have never cooked we not sure whether they normally eat ready meals or home cooked food as they do not know the difference. We had a number of students who were asking what are ready/frozen meals and the stark truth is they never enter the kitchen so how would they know.


There are some real gaps in the schools curriculum for teaching children about food, cooking and a healthy diet. We understand that schools have a tight curriculum as it is but surely some of this knowledge and information is as important as the three r's. It is also sad to see that children are not being educated by their parents on the food relatied matters, it seems only beneficial to encourage children to cook as it will give the parents a night of, teach the children life skills and educate them on nutrition.

Based on the previous discussion about jamie oliver and his school dinners i thought you may all be interested in our findings about our childrens eating habits, from seminars we have been giving in secondary schools.

The last month we (the cooking academy) visited several schools where we engaged with the children to understand their current cookery skills, knowledge of food and dietary habits.

This included:

When recently posting our thai fish cakes recipe http://www.curry-recipes.co.uk/curry/index.php?topic=4530.0 we included how to make a red curry paste often used in thai and asian cooking.

Here is The Cooking Academy's recipe for the red curry paste:

Classic Red Curry Paste 
 
Ingredients

1 tsp ground coriander (if already ground then just dry roasted for 1 minute) 1 tsp ground cumin (if already ground then just dry roasted for 1 minute)
12 fresh red chillies or 1 tbsp of chopped minced chillies or chilli flakes
1 red onion or 4 shallots
2 cloves of garlic /2 tsps chopped garlic
1 tbsp of chopped galangal
2 stalks of lemongrass finely chopped
4 lime leaves
1 large handful of chopped fresh coriander (about 4 full stalks)
1 tsp shrimp paste
2 tsp paprika
1 tsp salt
4 tbsp Oil

Methodology

To make the curry paste

Roast the ground coriander and cumin in a pan over a low heat for 1 minute

Add all the other ingredients into the food processor including the coriander & cumin.  Whiz for about 90 seconds intermittently, until you have a smooth paste


Store in a clean glass jar in fridge for up to 6 weeks


The red curry paste is perfect for all your Thai Cooking and is ideal as it will last in the fridge for 6 weeks.

Hope you can find a use for it and perhaps encorporate it into one of your dishes.

There is absolutely no reason why you can not get that BIR flavour at home, it may just be that you are not getting the spice blend right or are slightly struggling with measurements etc. But it is possible to find that missing link just keep trying and feel free to ask us for advice or if we could help with a specific recipe you can not get right at home.
