CA. brilliant recipe.

tried it recently results were good. just seems like to much hard work just for rice!

Also, went to a restaurant recently and the pilau had like golden stringy stuff on top
when served? didnt think to ask at the time.

any ideas what it was?

Hi,

do you guys think it make a difference to the flavour if the curry is cooked quickly,  like within half an hour?

yes he mentioned marinating it, but nothing about water and bicarb.

ive also just spoke to a butcher at the halal and he said there is a company that supply pretty much all the restaurants in my area with this type of chicken, but he had never sold it.

during a conversation with the local takeaway chef last nite, i asked him this question and he told me " the chicken is injected with water"  "thats the only way it will ever be soft!" he also said all birs and t/aways use this method.

he said there would be no other method to get it to cook that way.

Curry Base Chat / Too much tomatoe?
« on: December 08, 2009, 11:24 AM »
hi,

i made a base sauce last night and out weighed the onion with tomatoe.

i put in 1 large onion and 1 whole tin of tomatoes. The result was a very plain flavour.

has anybody experienced this?
