hi ppl was wondering if u could give me some help plz , i have been trying to buy kebab paste and have had no luck at all sourcing any ( a pitfall of living in rural Linc's i guess lol) question is does any 1 have a recipe for said base or as any 1 got a jar and can post the ingredients for me to try and replicate it from my store cubard at home ty all  ;D

Here's the ingredients from one commercial kebab paste.  Wouldn't it be less hassle to order it on the web, along with a few other bit of course, and have it delivered?  ;D


Vegetable Oil, Garlic, Rusk (Wheat Flour, Salt, Raising Agent: Ammonium Bicarbonate), Water, Salt, Ginger, Cumin, Coriander, Turmeric, Acidity Regulator: Sodium Diacetate, Spices, Tamarind, Food Acids: Citric, Acetic, Preservative: Sodium Metabisulphite.

No worries mate.  I'm sure your efforts would be good but there's enough to be doing in this curry making lark as there is without adding to the burden  ;D.  Let Mr Patak take the strain eh?  Spicesofindia is one starting point ;)

Just out of interest, what is the kebab paste going to be used for? (and don't just say kebabs  ;))

Only asking because I can't recall seeing it being used in any recipes on here. :-\

Some of Dipurajas recipes use it.  Think there's one or two other recipes as well.

Hi Martin
Kebab paste, used in BIR Kebab, Tikka and Tandoori marinades mainly.
The best one, used in restaurants is Pataks Madras Kebab Paste.
only comes in catering size, around 20 quid a jar.

Ok thanks guys.

Like I said, personally hadn't come across it's use so far.
Just re-checked all the kebab recipes I have, and none use it, so probably because it's only available in the large jars.

I've got the madras kebab paste ( pataks) 2.4kg ?9
Don't often use it , tried it in my sheeks nothing special

hi martin m8 sorry took me so long to get back to ur question , i was looking at the tikka recipe on dipuraja  channel on you tube and he uses it in his recipe for tandoori chicken ence i was going to have a crack at it :-) ( ivan )

Yes, that's the right paste. I wonder where I got the idea it was 20 squid.  ::)

Restaurants use it in they Keema, along with Kashmiri Masala paste.

I replaced it with Mangal Kebab Masala powder and the Keema was very good.

Worth a punt... ;)

Would it be possible to increase the recent posts on the main board index from 25 to 50?
that would've helped greatly this past week will all the spam clogging the system.
Also, there are more than 25 posts in a day so would be nice to have the choice of a quick glance. rather than going through 10 pages.

I think you've missed my point NJ. Recent posts is how i always navigate on this forum anyway.
What i want is for there to be 50 lines of recent posts on the main page rather than 25. Then we can see at a glance from the homepage how many posts there are each day, thus saving trawling through 10 pages of recent posts.  :) At the most i might have to go through 3 or 4 pages because i am usually upto date.

Hi MT
Restaurant Keema, Slack Hand recipe. all measurements are rough and heaped.
Get your biggest bowl, a plastic washing up bowl will do nicely.
Buy a kilo of lamb mince from a Halal Butcher, just ask for Keema.
Put it in the bowl, then add :-

2tbs Onion chopped (small)
1tbs Chopped Coriander (fine)
1tbs G&G paste (thick)
1tbs Mixed powder
1tsp Salt
1tbs Pataks Kashmiri Masala
1tbs Pataks Madras Kebab Paste
1tsp Methi leaves (optional)
Good Pinch of Kashmiri Chilli powder (optional)
Don't bother with food colour.

OK, Start mixing this lot, you really have to work this like you would Naan dough.
I thump it with the base of my palm, then turn, then thump, then etc... squeeze handfuls through you fingers, then thump and turn..........
until you have a fine mixed mass/lump. That's it , ready to go.

Use plenty of oil on your hand's to form your Kebabs.
