Title: Kashmiri Base (If there is such a thing)
Post by: Les on February 02, 2011, 10:49 AM
Hi Guy's
Is there such a thing as a kashmiri base? Have been searching the site, but found nothing,
So does anyone know of one, or can i use a base on site and change it accordingly.  ???
As I'm new to this, could use some help  ;D
Thanks
Les

This is a rather interesting question, Les, particularly as Wikipaedia has the following to say :

Quote from: http://en.wikipedia.org/wiki/Kashmiri_cuisine
Kashmiri Pandit food is also very elaborate, and is an important part of the Pandits' ethnic identity. The food usually uses a lot of yogurt, oils and spices as such turmeric, but avoids onion, garlic, tomatoes, and chicken.
the point being, of course, that onion and garlic are key to the bases that you will find here.  Are you trying to re-create authentic Kashmiri food, or more just something that is called (say) "Kashmiri Chicken" in your local BIR/TA ?

** Phil.

Thanks Phil,
I want to try and create the "Kashmiri chicken" (so called)  from my local T/A, (Couldn't do without my
onion and garlic ;D)
But just can't decipher the taste and separate the spices. (lack of knowledge)

Don't know about your local T/A but I know in one BIR here it is basically a chicken korma with fruit added.

Hi  Stephen
This one does have almonds, sultanas, and coconut in it, But looks nothing like a Korma, It's quite dark in color really,( like srilankan curry) maybe it's a hybrid
I did have one once in Bristol that had chunks of banana in it, not an experience to be repeated

Hi

I am pretty sure one of my recipe books at home has some recipes for Kashmiri curry. Just can't remember which one and whether it is traditional or BIR?

Will have a look for you when I get home.

Cheers

Thanks Jerry
I totally missed that thread on my search,
Cheers
Les

PS
Just had a read through the thread and I'm surprised to see the banana creeping in there, like i mentioned in my earlier post the curry i had in Bristol (in the 80s sometime) had chunks of banana in it, but these where big chunks about 3/4" I'd guess, and i thought the chef was having a laugh, but obviously not, so might give this one a go
Thanks Again

Hi hotstuff09, all

Had a good rummage through the recipe books and the recollection of recipes using the Kashmiri chilli and recipes entitled 'Rogan Josh Kahmir' are coming from a book I was lucky enough to receive as a Christmas gift.

It is this: http://www.amazon.co.uk/Great-Curries-India-Camellia-Panjabi/dp/1856265463 (http://www.amazon.co.uk/Great-Curries-India-Camellia-Panjabi/dp/1856265463)

While there are fantastic recipes in the book, plus lots of great information covering many aspects of traditional Indian cookery, I suspect this is not what you were after at all.

Sorry not to be able to help further in your BIR Kashmiri dish quest.

Regards

hotstuff09,

must admit i was same - i'd always had banana fritter with biryani but never in main dish.

the small canary type banana are best and need to be almost ripe. for me a to die for ingredient (even have it in my porridge).

Cheers Jerry
Looks like a banana is a must in this type of curry, guess I'll give it a go and see.
"IN PORRIDGE" :o  Jerry, that is sacrilege my friend,
As a Scot it's salt only for me ;D
