GulkExpat,

best traditional take i've seen but that's not saying much.

i've been making a take on bitchinsahsa's. for the tomato sauce i'd previously used passata but have recently switched to tin toms. the chef's take is clearly the business in terms of quality but a trade off between convenience and effort sits important for me personally.

the tandoori chicken looks real good and something i'd be interested in - u haven't by chance come across the chef doing it.

Doesn't finish up looking the same but is the same chef.

Axe,

many thanks. i'll make this next week for sure. i'll spatchcock it to cook on the bbq (like 976bars piri piri).

have tried the tandoori chicken in Axe's link and quite enjoyed giving it a go. many thanks to GulfExpat for the initial inspiration.

not bad - the whole family thought it was very good. it's certainly different and a change.

i particularly liked the taste the gram flour brought - sort of "woody".

i found it difficult to cook the gram flour as i could only get it to a sauce by adding water which is not stated in the recipe (only oil)

for me this competes with the likes of lasan and 976bar's piri piri. if u've tried either u'll know my preference.

i cooked it on the gas bbq for 30mins each side on low and then 7 mins each side on high. served with american fries.

Sanjeev Kapoor is a legend but I thought he looked like this. Is it the same guy in the video? Has he changed religion, started wearing a turban or what?

Hi George,

You are correct, that is not Sanjeev Kapoor in the video, it is Harpal Singh Sokhi, chef at the Yellow Chilli Restaurant in Hyderabad

Hope that clears things up?

Ah, that explains it, thanks. I thought Sanjeev might have aged a lot or gone all religious or something. Here's a photo of the two of them together on the page you linked to. Great video anyhow.

This recipe is very like another on YouTube I posted or perhaps it was someone else?
The important thing here is that they a FRESH tomatoes and really need cooking well. Interesting point on frying them too to keep the color.

I did say sometime ago to use Italian tomatoes owing to the fact that the flesh of these toms yield a lighter sauce, its just not red. Some good points so I've learned something there too.

Heres a tasty little recipe to use fresh tomatoes.
Chop some toms up, throw them in a frying pan along with a little oil and a pinch of salt and pepper and just fry them for 5 minutes until they are broken down and sticky.
Take  a slice of bread and dunk it in the tomatoes and eat it.
You'll be surprised at the sweetness that comes out of the toms, and also if you let the toms catch a bit and brown on the edges they get better still.

Has anybody ever tried this recipe as a marinade?

Going to try out Sanjee's Butter Chicken, but he don't say anything about marinading the chicken

Surely he does : right at the beginning of reel one (the first 6m44)

Quote from: Sanjeev
1st marinade : g/g paste, lemon juice, salt.  Wrap basin cling film and leave to rest for one hour.

2nd marinade : hung yoghurt, Kashmiri red chilli powder,  crushed dried methi leaves (Kasouri methi), garam masala (home made), pressed mustard oil (vital).
Mix and pour all over chicken that is still sitting in its first marinade (after removing the cling film !).  Leave to rest for three to four hours.

Your looking at the wrong video, The OP is Sanjee, not this one.
Just wondered what people thought of this one to go with Sanjee's chicken
Could by my fault, not explaining it properly

;D ;D ;D

But to return to the marinade : Chef Harpal Singh Sokhi, in the OP video, speaks of (and uses) already tandoored chicken, so you might try the online recipe for Tandoori Chicken (http://www.sanjeevkapoor.com/TANDOORI-CHICKEN---KHANA-KHAZANA.aspx) marinade from Sanjeev Kapoor.

Hi HS,

Got to admit, I'm a little confused too ???

Are you asking, what do we think of the marinade recipe in this video, to use with Sanjeev butter chicken recipe?

If so, why don't you just use the video that you posted to do the whole thing, as both recipes are very very close?

Ray :)

Hi Ray
Just because i want to do Sanjee's, But he doesn't mention how to do the chicken, I know they are near enough the same, But i like the look of Sanjee's sauce better.
No different to picking the same recipe from two books, You will always prefer one recipe to the other,
Cant see why your confused ::) Obviously don't take much to confuse

HS,

What I was trying to say is this; both the butter chicken recipes are pretty much the same, ingredients wise, so to go to the trouble to watch/write down one recipe for the marinade, then go to the other video to watch/write down a recipe for butter chicken, which is almost identical to the recipe from where you have sourced you marinade from, make little sense to me.

But that is your want, and I totally respect that, I was just curious as to what it was that made one recipe stand out over the other for you that's all!

Yeah, agreed, unless they are more or less the same ingredients wise, which these two recipes are!

Hey HS, the ability that some people possess to cause confusion, never ceases to amaze me  ;)

Sanjee dosen't add Milk, Water, Tomato Puree into his sauce, Just good natural flavour from the tomatoes, which is one of the reasons I picked It. It's that simple,

I do seem to have this rare ability to confuse ;D Some may call it a gift, others maybe not 8)

Well, yes, I'm forced to agree : by ascribing your own words to Ray (see quote of quote of quote), you can indeed succeed in creating massive confuskion  ;D
