Title: I want to use ghee but....?
Post by: grandmasterrew on November 05, 2009, 05:08 PM
Hi All

Ive been reading alot of recipes on here and im about to try my first base sauce and curry (probobly madras) at the weekend but nearly all recipes use(or say) oil.

I want to use ghee and have bought a huge can but before i start do i just supplement if the recipe says 3 table spoons of oil with 3 tablespoons of Ghee or would it be a smaller measure since ghee is being used?

I know its very un-healthy but from what ive hread its way tastier in currys than oil!

Looking to use CoreyAnders madras recipe

any help would be great

cheers

There is a lot of controversy on whether real ghee is actually bad for you. You will need to read more on this subject - there is plenty of info available on the web.

Apparantly vegetable ghee is actually a lot worse for your health than butter ghee.

I use real ghee all the time, especially to add that extra special taste to rice.

Hi SnS thanks for this I had no idea, I'll probably dump my veg ghee. I used to use good old Butter ghee but then stupidly bought this massive tin of veg stuff.

Thanks for the info.

Personally I'd say 3/1 oil/ghee, that way you get the flavour without the greasiness, HTH.

Beware though that Ghee can RUIN an otherwise good curry. I had some friends round a few months ago and we put Ghee in everything using it like you would butter and the result was appalling. Everything taste cheesy which was a shame since everything from the base to the bhajis had it in. Maybe I had a rotten batch or maybe I jsut used too much but I know I wont use it again!

A T/A I use have Oil in a container on one side of the Hob they melt  ' some ' Butter Ghee in the Oil , I use 1 Tablespoon per Curry and the rest Oil . I used it in Rice once YUK ! Never again , proper Butter is much better.
