Midnight Snack 12

Mutton Vindaloo

Fancied something a bit meaty for a curry supper.
Bought a kilo of currycut Mutton, on the bone.
Cooked it off with spices, onion and seasoning (Comptons)
Decided on a Mutton Vindaloo with restaurant style chips and Saffrani Pilau.

Mutton inspiration and Saffron donated by Gav, scoffed by yours truly. :P :P ;D

Looks the biz Chewy. On the bone mutton's probably my favourite curry meat. Lots of flavour.  :)

That does look gorgeous, Chewy.

To repeat DOs question, how would you marinate/pre-cook lamb/mutton?

Not saying he did it this time but I've done this quite a few times now and it works a treat. Read the whole thread though, well up to the timings for on the bone at least.

Are the chips crinkle cut Chewy or are my eyes deceiving me. The takeway across the road from work used to do crinkle cut proper chips and they were great with the Sunday special. Made it a feast for 2 people.  :)

I have to say, I just got my pressure cooker last year and its fantastic for all things curry. Well worth buying especially for Homestyle curries.

Not wanting to derail this thread but what curries do you make in the PC. Have you listed them anywhere with recipes.

Basically any traditional on the bone recipe of Youtube or my  books that I fancy, I just do in the PC.

Don't know whether this will help.
CT gave me this advice and I now use my pressure cooker to precook my lamb or beef.

Hi P360

A simple start would be to

brown off the portion of cubed Beef,
with oil,
onions,
2 Tej Patta,
2inch cinnamon,
5 cardamom pods.
Stir fry this in your pressure cooker for 5ish mins,
once it looks browned.
take a kettle and cover with boiling water (careful).

Pop the lid on and lock,
bring it up to pressure (high heat) then soon as its
up to pressure,
turn the heat down to low.
 Let it cook for 15mins then switch
it off and leave it to release the pressure naturally (about 10mins)

Have a look and it should be tender, if not put the heat on low and slightly
simmer and stew until its perfect. (lid off)

Tip: ? Use a timer, 15 to 18 mins is all you need under pressure.
overcooking makes Beef/Lamb tough and it looses its flavour into the stock.

Quality. I used to have my mothers old one but it mysteriously disappeared. It'll have to be replaced.

Hand cut in my BIR Gav. ;)

Chipshop chippers cut them too thin and random (plus bits)
and they are a little bit more expensive ;D

Yes, cook for 2 to 3 hours. The longer the more melt in the mouth it is.
