PanPot's Vegetable Pakora

Ingrediemts:
- Chopped Onion 300gms
- Chopped potato 150 gms
- Chopped Cauliflower 150gms
- Chopped Spinach 100gms
- Coriander Seed 1tbs
- Cumin Seed 1tbs
- Red Chili Powder 1tsp
- Salt 1tsp
- Garam Masala 1tsp
- Gram Flour 300gms
Method:
- Mix all the ingredients
- Leave to bleed liquid for 1 hour
- Mix into a batter (adding water, if necessary, until the mixture just holds its consistency dripping from the back of a spoon
- Use a teaspoon and scoop into hot oil (the pakora will bob up to the surface so push down gently with the back of a slotted spoon)
- Half way through cooking, lift pieces out to rest for minute before continuing to cook until a dark brown colour
