Sizzling Secret.

Hi Gang, I've got a bit of a quandary for those with knowledge. Last night I took my little flower [ Mrs Spicy } for a meal in our favorite B.I.R. last night to celebrate our 30th Wedding Anniversary. Anyway Mrs Spicy ordered a Chicken Jalfrezi, when it came it was on a sizzling cast iron Karari. I'm just wondering what do they add to the mad hot Karari to give this effect. Is it oil, onion juice, lemon juice, or water. Or do they just super heat the Karari and then add the Jalfrezi. Any advice will be welcomed as I would like to replicate this to get the same reaction from my little beloved. Thanks Paul

Hi Paul, They heat the karahi over an open flame (being cast iron) and then put the hot jalfrezi into it and then squeeze lemon juice over the top. This make it sizzle! CQ

CQ is right, but the skillet MUST be as hot as you can get it. The curry MUST be really hot too.
If you add some melted ghee to it will react with the hot curry and sizzle, the lemon (or lime) juice will really set it off. I do this a lot with Tandoori KP's

Big congrats Paul, well done. Funny isn't it, but I took my dear heart for a slap up curry and Mrs Miggins's on our 30th too ;D. Just give us his email CQ and we will send in the Curry Knights in shiny armour ;D

Oh and Merrybaker the secret of a long and happy marrage is'nt just about cooking for our beloveds, {Getting Mrs Spicy to see to my veg now and again keeps me a happy chappy. } I mean down at my allotment. ;D ;D ;D

To make a dish sizzle, do the following:
Heat a sizzling dish (i.e. a heavy cast iron dish) until it is really hot (i.e. heat for at least 5 minutes on the hottest flame)
Remove the dish from the flame (you don't want it to ignite when you add the ghee or oil!) and add a tablespoon, or so, of melted ghee or oil to the dish
Throw a little chopped or sliced onions onto the dish
Squirt a teaspoon, or so, of lemon juice onto the onions
Immediately add the pre-cooked and heated main dish
Be careful not to burn yourself or anyone or anything else in the process!
