What is the volume of ladle?

can someone define for me the volume of a ladle used ih the recipes. i assumed it to be 200mls approx but some recipes for one person say use 2-3 lables of base gravey
which would be 400-600mls a large portion indeed

I think it varies, measured mine as 100mls and I go for 3 ladles.

Thanks for the reply I suppose 200-300ml represents a medium to large portion and go by that as a guide

Im finding this very confusing atm.

I have a recipe that says to use 3 ladles of sauce, its for a jalfrezi, now one of bruce edwards recipe's calls for 1 7oz laddle to be use's so i am confused to how bit laddles were used in the particular recipe.

If it helps My ladle has 160ml stamped on it, I use about 2 & 1/4 ladles of gravy for two meals about 360ml at a guess

it's all a bit inconsistent. i ended up measuring my ladle and found it to be 150ml.

i'd stick to using around 300ml of base to produce a 200ml portion otherwise u end up not knowing where u are with the rest of the cooking ingredients ie the spice mix etc.

if still in doubt i'd post a question to the recipe owner for clarification.

the BE 7 oz equates to 200ml. on the 3:2 reduction basis this would end up as 130 ish ml finished curry which is very little.

I'm afraid I can't. Nor should I, or anyone else, have to, IMHO. It would be so much easier if everyone could stick to normal standards! Sigh... The programmer in me is leaking out into my curry related doings! ;D

I try to stick to recipes that use specific measurements. A chefs pinch of this and ladle of that could throw any recipe well out! Have a good read around and it will soon become obvious who the better recipe posters are, all of whom lay it down unambiguously.

guys dont worry so much about exact measurements of things like ladels. cooking is about letting go, to some extent, of rules and measurements, and going with instinct. if you accidently add too much base, so what, just add more spice mix , or reduce it down by evaporating. who knows you might just suprise yourself with the end curry. any old fecking ladel will do ! Good cooking is about having some fun, and not getting too uptight about exact measurements of everything. cooking insights often occur through our mistakes. thats how you learn to be a better cook. bir chefs judge things through sight. they certainly don't measure anything exactly.
