I also use these, i add a few finely sliced onions on the top when cooking because they go slightly doughy then flip over and cook, also finely chopped coriander leaves, chilli flakes, green chilli finely chopped, onion seeds, ajwain seeds and also garlic finely chopped and sliced.

Hi bhamcurry my brother moved to Alabama about 10 years ago, he loves it over there. Lives in Athens, he coming over this year so got to get my Balti cooking skills up to scratch.

I don't do anything i just use a hybrid of Blades recipe but add homemade Tandoori paste instead of tikka paste, add dried mint instead of mint sauce and use a touch more water, i do add 1 tbsp lemon juice to the lamb chops and leave for 25 minutes - 30 minutes then add marinade and leave over night in fridge then cook in tandoori oven with lid slightly open a little.
