Coconut flour is the main bulk of the stuff in the asian supermarkets up here although they also have coconut milk.

Great stuff.  Be good if he was up for a second group later in the year.  With enough notice I am sure some of us northeners would make a trip down!

Hi

I think there can be a large discrepancy in the measures.  I made it before I saw curryhells post (cheers for that) and the measures I got (peeled and chopped weights)

Onions:650g
Carrot: 100g
Potatoes: 350g
Coriander: 20g

That is about a 50% difference in the weight of the onions which is sure to make a difference to the taste and texture to the dish.

Also a handful of coriander is massively ambiguous and for new (and not so new :)) curry makers, as correct a measure as possible can only be a help IMHO.

One of the reasons Cory's recipes are so popular and work so well.

I have made the basic and enhanced gravy so will report back when I make a curry.  First impressions:  too much heat for milder dishes.

Hi

If it is still cokking when I drain the rice I rinse in cold water which stops the cooking process then give it a few mins in the microwave to reheat.

Hi

A question for those who have made this base.  Do you have a weight measurement for the onions, potatoes and coriander?  There could be a large discrepancy in the recipe depending on the types of each ingredient you use!

Thanks in advance.

Spices / Re: Dont Dry Roast Spices
February 01, 2012, 07:49 PM
Hi

I think i have mentioned before that i have previously done a side by side comparison, roasting cumin and coriander seeds vs not then grinding them. didnt notice a difference so dont bother now. not compared with other spices.

Lets Talk Curry / Re: What curry spoon
January 31, 2012, 05:11 PM
Hi All

I previous to xmas used a meyer analon wok come omelette pan with a plastic spoon fot cooking my curries.  The wife bought me an ali pan and spoon to use to see what all the fuss was about.

Cooked with the ali pan at the weekend.  Noticed no difference in my curry taste.  the noise of the metal spoon scaraping the pan was starting to grate on me a bit so will try the ali pan with the plastic spoon.  You do need to be more careful with the plastic but never melted it yet!!!!

that would be too watery for the consistency i like.  the onions and other stuff add consistency which that has not got.
