Supplementary Recipes Chat / Garlic and Ginger Puree

Anyone got any tips on the best way to prepare this.? My blender is to big and wont get it into a fine paste :-\.
Equally chopping it does not seem to do the business, how do you do yours?

I have used the Pataks Puree's but i am sure the takeaways must do it fresh.

Any tips much appreciated.

Hi,

I made a batch last night i am impressed with the simplicity, flavour and colour.
As you say all i will do for the Madras is fry the ginger/garlic in oil, add Chilli, Corriander, Cumin, curry powder mix, bit of Methi and thats it.

Maybe this is the winning sauce as its very simple, easy to make and not too flavoured as to over power, therefore making it very versatile in application. ;D

For ?400? ::) squid any local takeaway curry house would close for the day and give you full access to kitchen including their chef.....i know i would.

Maybe thats the answer, get 15 people together paying ?50 each and i bet they would teach you it all.

Any curry houses reading this 8)

I was going to give this a go tonight, has anyone made the sauce is it ok, all i want is madras and vindaloo styles.

Well once as I was dishing up my Vindaloo on to the rice i got a splash back of the gravy straight in my eye  :'( The most pain i have felt in a very long time, i really thought i was gunna lose it.

Its ok now though  ;D
