Hi lorrydoo, yeah it is used in the main madras recipe you will get about 6 dishes out of it, however if you do not need that much you can adjust the amount of chicken i think thats what BB done. (one portion of base chicken does not equal 1kg base chicken).

I have not used the left over water because the base gravy is quite aromatic already. hope that makes sense. UB.

Tandoori and Tikka / UB'S Chicken Tikka Puri

UB'S Chicken Tikka Puri - Tikka Chicken in medium spiced gravy served on a puri

1 Starter size portion of Tikka
1 Puri
150ml UB'S base gravy
0.5 Tbsp veg oil
1 Tbsp tomato paste
0.5 Tbsp fresh chopped tomato
0.5 Tbsp chopped onion
1.5 Tsp spice mix
0.5 Tsp Methi
0.5 Tsp chili powder (optional)
1 Tsp chopped fresh coriander

Method:

Add oil to pan and bring to medium heat, add onion and tomato cook until onion has softened, add base gravy, tomato paste, bring to simmer add spice mix, Methi, chili, coriander stir in for a minute then add tikka cook until chicken is piping hot. Spoon onto warm Puri best serve with onion side salad and fresh lemon. Enjoy UB.

Notes:

Spice mix
Coriander 8 parts
Turmeric 7 parts
Cumin 5 parts
Curry powder 4 parts
Paprika 4 parts

Methi is dry leaf kind.

Tomato paste is a mix of double concentrate tom puree and water, 40% puree to 60% water.
