The CTM recipe does look good (the masala paste recipe looks pretty straightforward as well).May have to give this one a go myself!!!

Yeah it was disgusting HOWEVER one interesting point was when the undercover guy was being shown how to make tikka massala.Bearing in mind the restaurant prided itself on not using any artificial colours or ingrediants the chef then produce a big tub of Patak's kashmiri massala paste and proceded to spoon a large dollop into the pan with the comment 'that's what gives it it's flavour'.I've always wondered why my take-away has loads of massive Pataks pastes on it's shelves and why they really don't want you peering into the kitchen!!!!!

Don't know if anyone has been on this yet(or even heard of it)...

Basically the local environemtal health officer from the local council visits your local curry house and gives its findings out of five on the website.

I wish I hadn't looked....by local takeaway(only a small place where you can watch them cook ) got a terrible rating(0 out of 5)  The thing is the food is excellent!!!

Have to say they I think they make fascinating reading,love reading about everyone's results...Would love a chicken tikka massala recipe though-just to find out if they really do put tomato soup in it!!!!!!!!

Lets Talk Curry / Great British Menu - BBC2

Don't know if anyone has been watching the cooking programme on BBC2 at the moment,it's the one where two top chefs put a menu together to cook for the Queen's forthcoming birthday.This week they've got Gary Rhodes against Ashton Kukcha,who's the only Indian restaurant owner who's achieved a Michelin Star Award.

Anyhow they showed a couple of interesting clips of his kitchen,cooking a large batch of popodams etc,but they also showed a couple of very large pans simmering that looked to me like base sauces.....so even the top chefs use them!!!!!!  On Wednesday he's cooking tandoori chicken(without a tandoor I presume) Wonder what the queen will say if he wins????

Hi everyone.Had a spare half hour so I thought I'd have a browse on Ebay.Typed in 'the curry shop' and found yet another 'chef' offering to give away his secret spices/ingredients(for a price).Have a look,still an interesting read for us curry fans!!!!!!!!

Starters and Side Dishes Chat / Bombay Potatoe

Went to my local Restaurant last night(as I do every Friday) and I had probably the best Bombay potato ever(no exaggeration).Would really love to be able to replicate this dish,I don't know how they managed to get the potatoes cooked so well,they literally melted in your mouth.I'm sure I've read on this forum they sometimes cook them in the curry gravy and 'that' taste is from dried mango powder,but when I asked the waiter the top secret mode went into action with "Not sure,only the chef knows!!".It must be the only cuisine in the world that has it's techniques hidden so much,sort of a Freemason's thing!!!

Don't have a recipe although at the moment I seem to have it every week in my local.They do just call it Garlic chicken(another local calls it North Indian Garlic Chicken for some reason).Doesn't seem over garlickey if that makes sense but just has a real smokey distinct taste,although my girlfriend always moans when I eat it after a few pints!!! Just wish I could see them make it.....
