I find myself back in Khans tonight. Chicken chaat starter already down my neck and that was quite pleasant. Chicken dhansak, Bombay aloo, pliau and naan incoming.

Service still as hostile as ever!!

Bacon should always be boiled for a few mins before frying anyway. it helps the fat render and yield a crispy result. Once you've tried boiling bacon prior to frying you may never fry it unboiled again

Leaving aside the food for a moment, I think one of the keys to success is the relationship you strike up with the customer. If people feel welcomed and looked after they will come back. Some of the most successful restaurant chains in the world hardly provide the best food but all pay close attention to the customer experience

There's no fundamental reason they should be expensive, they're just leaves after all. Sounds like a case of an inefficient supply route with too many opportunistic mark ups being applied.

Flat leaf parsley is the palate cleanser of choice of professionals onion tasters. It should be chewed between each sample being tasted. Might also work for resetting your taste buds if chewed after cooking a curry and before eating it.

That's a good spec Naga. I wonder what pressure it achieves as a pressure cooker, as some electric pressure cookers are lower pressured than a "real" hob top pressure cooker.

Now I'm confused.  Any ideas on this one Phil?

Littlechillie has applied his full IQ to the situation and concluded that Kattis isn't a girl and is only here to promote another forum. Furthermore, with the application of his only other evident personality trait, that being rudeness, he has not let the possibility of causing offence to a genuine, friendly and enthusiastic new member of the forum deter him from applying his thumbs to his keyboard to bash out the messages higher in this thread. The likely result is that a pleasant young girl who brought some sunshine to this place and who wants to be accepted here is possibly feeling dejected.

A bit of moderation to keep our bully boy LC in check would be good, before he applies his IQ to further issues in the same way.

I've no idea Phil, I was long gone by that time.

When I was in at around half six there were about 7 tables occupied, which isn't much in such a large dining area as they have. Now as I mentioned I only ordered small because I already had a pub lunch today, but what did order didn't impress me much. The rice was nice enough actually, very good separate grains and well flavoured, but no taste of the promised chicken stock, so this must be a subtle addition. The meat madras had a distinctly tomato soup flavour to it which didn't sit well with me. The meat was beautifully tender and the heat level was right, just a very red and slightly sweet curry which didnt ring my bells.

I'll go back another day and give them another chance.

I don't need or want waiters fawning over me, and the service was fast enough, but I have to say there was no friendliness or personality on display and the guy who brought the food didn't say a word or make eye contact. Maybe this is related to the fact the bill arrived with 10% service charge auto-added so clearly they don't feel a need to work hard for tips!

But like I said, it's no skin of my nose and I don't need the waiter to do a tap dance while I eat, for me it's about the food and today was a 5/10 could do better.

Well I find myself sitting here in Khans awaiting my simple order of meat madras and pilau rice to come out. Will let you know how it goes...
