Great video littlechilie, thanks for posting. Whole spices for me also & blended green chillies instead of powdered make a great madras.

Agreed littlechilie regarding the tomato / oil aroma. Easily tested at home also

Get some M&S Creamy Burger Mayo:

http://oi52.tinypic.com/s0whu1.jpg

Use Warburtons white sliced rolls:

http://www.warburtons.co.uk/products/rolls/white/8pk-white-rolls

Heat a non-stick frying pan with no oil in it, place the rolls so that the inside faces down on the pan. Warm them through like that and they are very close to McD rolls.

These would have been closer but still nowhere near

Hi Stuartnewport, you might find everything you need here.

Recipes from Muoi Khuntilanont's Kitchen & her husband Ian Philpott

http://www.chetbacon.com/thai-html/thai.html

http://www.abarnhart.com/faq/Colonel.htm#Sataykai

Lots of great Thai restaurant & street food recipes, with all the pastes, sauces & dips covered.

Might be a good idea to copy the lot in case it's not around forever

Welcome Geoff, where in the UK or what restaurants/ta's / dishes are you trying to recreate at home?

I normally add the meat with the cooking liquor littlechillie, sometimes using a ladle, rather than dry pieces of meat like most of the videos available to date.
Stocks have been discussed on here plenty , but combining the stocks sounds like a decent idea
Place I was in recently had an open kitchen & the chef constantly added something from the frying pans to his smaller pot of working gravy.

ELW I'd like to try that sauce although Kraft Miracle Whip sounds like one of those hard to get American imports.  ???

Gav Please PM me the damage for the shatkora pickle.   :)

MushroomMike,
Miracle whip is available online, but just double up on the normal mayo instead.

**give the sauce a blast in the microwave for about 30 secs than cool & refrigerate**
The dill relish / sweet relish (to give the sweet & sourness) can be found in Polish supermarkets or the Polish section of a uk supermarket. Try there for jarred stuff (Vlasic brand does both)
If you don't have dried onion, at least soak the fresh chopped in water for as long as you can.
Fresh onion will ruin this little project, as will supermarket burger buns, which are nowhere near as sweet.

Tips for closer authenticity: Assemble upside down in under 10 seconds, leave lying for around for 45 mins, serve and enjoy  :)
