Just ordered a copy from Amazon.Probobly gonna be load load of rubbish I know but curiosity has got the better of me...I'll let you know what it's like when it arrives.

I'll be taking a pen and pad for sure.Not sure about video though,or even a camera to be honest.I don't want to scare them off thinking I'm doing something undercover or checking up on them if that makes sense.I just want to get my foot in the door and see how it pans out.Hopefully the offer of ready cash for some lessons might temp them.

No probs trying not to build my hopes up too high don't want to be dissapponted until I get there and find out exactly what they're gonna show me.High on my agenda to ask about is oil,base sauce,marinades,gas heat...oh well you all know the score!!!

Lets Talk Curry / A lesson in my local take-away

After a lot of persuasion(ok nagging)I've finally managed to get myself a lesson in my local take-away(this Monday 17th).The place is not much to look at;it is a small take-away tucked away in the middle of nowhere,however the food is excellent.
Not sure exactly what they will be willing to give away,I've explained that I've had some lessons before and I(hopefully)know the basics.
  I know my eyes will be everywhere....I hope they're ready to be bombarded with questions!!!!  I will keep you posted....

Hi JB

Do you have the Under Cover Curry book?

Despite what you may have read on this site there are several great recipes in there. I whole heartedly recommend, I think its on page 94? the Garlic Chilli Tikka Chicken. It works well with plain chicken and prawns too.

Sounds similar to the link you posted above.

EDIT: No need to make the Under Cover base either. The recipe produces a fantastic dish with the CA base, so anything similar should be acceptable too.

Thanks I have that book.I must admit the base looks a bit drawn out for me and a bit vague so I think I'll use my base with that recipe...I'll let you know how I get on!!!

I guess I must be super human then!!!!! The chicken tikka was grilled first and then left in a low oven.I then did the rice and that was also left in the warm oven to fluff up.Both the side dishes and mains were all cooked at once on the hob and left to simmer.I must admit it was a challenge but it all came together.The thing my restaurant chef told me was to do keep calm and concentrate making sure everything is done in order...ie oil first,ginger/garlic then spice mix etc.I'm doing another feast this Saturday for some other friends so fingers crossed it all works out ok.One of the guys does like his hot/savoury curries I'm just wondering if anyone has any recommendations of a recipe on this site I might try on him???  thanks guys

Had another cook up tonight for the wife and me....Chicken tikka massala,pilau rice,Chicken tikka balti,sag aloo and bombay potato.All went well(allthough the kitchen was like a sauna hence some steamed-up pictures!!) Have to say it got pretty hectic everything seemed to happen at once...I take my hat of the guys in my local take-away they make it look so easy!!!!

Was well chuffed with this.I've always been a disaster cooking rice but this was as good as my local.The wife said it was nicely spiced and fluffy in texture.The last lot I made went into a rice cooker...what a disaster...I followed the instructions but when it came out it was blooming horrible.Mind you I used too many spices for the portion and too much colour.

Chicken tikka massala....


Cooked as my alloo massala but obviously with chicken tikka.Also added a swirl of cream at the end together with some flaked almonds and sultanas(Exactly how my local used to serve it but unfortunately their one is now full of coconut and a bit plain for my liking)

Sag alloo.....



The only disappointment really.Instead of using fresh spinach I decided to use frozen(I know my local takeaway uses either frozen or tinned).The only problem was the water content..maybe is should have drained it first.I did spot some spinach puree in my local Asdas(KTC brand),I wasn't sure whether this was the stuff that most people use.

Very nice but still not as good as my local.Theirs has a real savoury.sweet flavour...I just wish I could find out that missing taste.Maybee it's in their oil I don't know.

All systems go!!!!

I followed Dipuraja's recipe for massala but added par boiled potatoes insted of chicken....It was spot on.I kind of used his bombay aloo method(with my own base sauce and spice mix).I added a pinch of panch poran when I added the spice mix.
