Lets Talk Curry / Re: Base in 2 stages?
November 27, 2012, 10:35 PM
Sorry Chewey. I didn't make that clear perhaps. What I meant was, can I cook up until the bit before I ad spices etc but then stop, let it cool completely then start over again and carry on again later having started from a cold mixture?

Is it ok to cook a base to the stage before adding the spices and toms then cooling before carrying on with it again later? Got one on now have to go out unexpectedly.  :-\

No, not those Rubydoo. I'm on about those tupperware containers that have a nipple in the lid through which you can suck most of the air out with a supplied pump.

Whooaaah. .. Thought the only porn on here was curry pics but ....hey .... Keep talking.   :P

Nice idea.. CTM has never really been my thing plus I have had to get almond and coconut powder etc but....... That said i do like to have a couple of spoonfuls. Just cannot manage the sweetness of a whole meal.

There are MANY others that don' t use coconut. Welcome.

I am new but hey .........  At least I have now got another post.....  :o ;). This where other forums / mods would normally lock the thread. It is going nowhere and means nothing but as it is 'something other than curry ' then each to his / her own. Don't like, don't read.   :-X

Has anyone used these...do you have any recommendations on which ones to buy (or avoid!)?

Not quite sure exactly what you mean but I have one of those machines that sucks all the air out of a sealed bag. It is good and it seems to work but the only time we have used it was to preserve coffee beans. To be honest it is one of those things that sits on the top shelf. As far as curry goes all I do for stuff in freezer is suck the air out of the bag and tie the bugger up.

Lets Talk Curry / Over did the Tikka
November 27, 2012, 02:40 PM
Hi
Just Tikka'd 8'large breasts of chicken. Marinaded overnight and smelling great.mgrilledmin two batches but Imknow the first batch is over cooked. It is not burnt and tastes ok but I know also it is on the dry side.

Can i recover this to be succulent?  I won't  throw it cos I am far too tight but I know for sure the second batch will be much better. Intended for my first real attempt at CTM at specific request of phillistine son in law to be.
