QuoteOK, will do.  Would you want the full 2.4kg catering size, or a smaller quantity ?

Hmmm. How difficult would it be to pack some in a sealable container? I don't think I'd ever make a dent in 2.4kg!

Phil - I totally appreciate your help in sourcing this!

The NIS has been on my to-do list of curries since it was originally posted (thanks for that!).

Scanning the ingredients and looking at the pictures, it looks a lot like what they serve over here as chicken tikka masala. Little resemblance to a BIR CTM, but often a tasty curry in its own right.

I will give this a go on the weekend.

Hi Phil,

QuoteIf it weren't for first-hand experience of Canadian customs, I would offer to post some to you at cost, but I fear it would never make it beyond the frontier.  If you can do your homework and confirm that it meets the myriad rules and regulations that govern the import of foodstuffs into Canada, I can in return get you an estimate of the costs involved.

Actually I've always found them pretty lax on imports. cr0 member Michael.T sent me a large unlabelled margarine container of Rajah curry powder last year. Arrived no problem, even tho it looked like it could have been black tar heroin... Pungent odour too lol!

QuoteWhere exactly are you in Canada ?  I know of one outlet in Waterloo that would be very likely to carry it, but Canada is a /big/ country and the chances of your being within driving distance of Waterloo are vanishingly small ...

Actually I'm in Toronto, so Kitchener is about an hour away. What's the place you are thinking of? We have plenty of Indian cash and carry's here in Toronto, but Madras Kebab doesn't seem to be one of the products Patak's are distributing into Canada.

Thanks for your help and suggestions!

Chewy - what would you say is the closest reasonable facsimile for the Patak's madras kebab paste? Its not one of the standard Patak's products here in Canada, and a shipper from the UK wanted 200 pounds to ship it! SpicesofIndia.co.uk don't seem to stock it either.

What would you suggest?

Thx,
Josh

Absolutely stellar! So much work, so much reward!

Ray - yes, it is indeed your original Seekh recipe from the cr0 group tests. And you're spot on - it was the Chinese salt and pepper mix that dissuaded me from giving the updated recipe a go!

PaulP - as for which spice mix, its actually a "blend" of mixes. Part Bruce Edwards, part Ifindforu. I had containers for each in my spice cupboard and didn't have them labelled, so I just mixed them together.

Here's some pics of tonights dinner.

Everything turned out great. No issues with the BIR quality of this whatsoever.

I am hoping to get back to the UK later this summer and compare to true BIR fare.

Razor's Seekh Kebab
Chewytikka Jhal Frezi
CBM Madras

Everything was to spec, with the exception of an added tablespoon of Ashoka Bunjara in the Madras. The base was Chewy's one-hour pressure cooker version.

Really liked how the 'fresh' heat of the minced green chillies in the Jalfrezi, contrasted with the Kashmiri Mirch of the Madras. Both were excellent.

Good adds guys. I had not considered an "extra singe" at the gas flame after cooking.

Out of curiosity, can anyone say definitively or not, whether tikka should be cooked on the barbecue or in the oven (in lieu of a tandoor)?

Interesting - I've never experienced this "splitting", but seeing PaulP's pic, I see what the issue is.

CH - is it something fundamental with the C2G base that you believe led to the trouble with the Zaal Phall?
